I'm wondering what programs are available to download where i can make recordings of things i do on the screen. Including recording videos like on YouTube which Ed Dale has done in a few of the tutorials.

If any one can suggest some free ones or trial ones that would be great, thanks

For a PC you can't go past Camtasia which has a free trial version.

For a Mac you would use Screenflow (what Ed uses) this also has a free trial version.

For PC CamStudio is open source and free.

Is it possible to save a camtasia recording as something other than a captasia file? Or will i need to pay for it to be able to save as an avi or something which can be playable on windows media player?

Absolutely, it can be saved in various formats - can I suggest you do a quick google search and you will find many tutorials on how this can be done.
